The eCook Tanzania Cooking Diaries study aimed to understand how Tanzanian households cook and their compatibility with electricity. 22 households kept cooking diaries for 6 weeks, first using their usual fuels and stoves, then transitioning to electric cooking appliances. The study found that cooking with electricity is compatible with Tanzanian cuisine, and modern energy-efficient appliances are desirable. The Electric Pressure Cooker (EPC) is a prime candidate for future eCook products, reducing energy demand for "long boiling" dishes. The grid in some areas of Dar es Salaam is strong enough for direct AC cooking, but battery-supported appliances can make electric cooking more attractive, especially during blackouts and brownouts. The study suggests promoting off-the-shelf AC efficient electric cooking appliances in Dar es Salaam and potentially other parts of Tanzania.
