Summary

Researchers from the Institute of Animal Reproduction and Food Research of the Polish Academy of Sciences investigated the relationship between the sensory quality of pea sprouts and their contents of phenolic and nitrogenous compounds. Pea seeds were germinated for 7 days, and the sensory quality of sprouts was evaluated using quantitative descriptive analysis and hedonic tests. The results showed that the time of germination significantly affected the sensory quality of sprouts, with attributes such as color, odor, taste, and texture differentiating the sensory profiles. A negative correlation was observed between the overall quality of sprouts and the contents of total phenolics, total nitrogen, and non-protein nitrogen. The study suggests that the health-promoting properties of pea sprouts may be compromised by their sensory quality, which can be affected by the contents of phenolic and nitrogenous compounds.
