Summary

It introduces the work of Zhang Yuan, a reclusive scholar who wrote "Tea Notes" after 30 years of studying tea. The notes cover various aspects of tea, including picking, processing, judging, storage, and brewing. Key points include:

- Picking tea at the right time, ideally during the five days leading up to the Grain Rain, and choosing the best tea buds, which are purple or have a wrinkled surface.
- Processing tea by separating old leaves and stems, roasting the tea in a wok, and drying it over a fire.
- Judging tea based on its color, aroma, and flavor, with excellent tea resulting from meticulous production, proper storage, and appropriate brewing.
- Storing tea in a jar, sealed with bamboo skin and paper, and keeping it away from wind and fire.
- Using the right fire to brew tea, with a red stove fire and gradual fanning to achieve the proper medium.
- Judging boiling water based on the appearance of bubbles, sound, and steam, with the ideal water having no sound and steam rushing straight upward.
- Using "young" hot water, which refers to water with a strong boil, to brew tea, as recommended by Song dynasty tea master Cai Junmo.
