Summary

Chateaubriand is specialist in dry-aged vlees, waarbij de mooiste delen van Schotse Aberdeen-Angus runderen wekenlang gerijpt worden in een speciale rijpingskast. Dit resulteert in een ongeëvenaarde smaaksensatie. Dry-aged vlees wordt gerijpt in een speciale koelcel met gecontroleerde luchtvochtigheid, luchtcirculatie en temperatuur, waardoor het vocht in het vlees verdampt en de natuurlijke enzymen het spierweefsel afbreken. Dit proces duurt minimaal 21 dagen en resulteert in een malse structuur en intense smaak. Na het rijpen wordt de natuurlijke korst verwijderd en het vlees van het been gehaald, waardoor het vlees klaar is voor consumptie. Chateaubriand biedt verschillende soorten dry-aged vlees aan, waaronder rib eye, lende, côte de boeuf, entrecote, tomahawk steak en T-bone steak, allemaal afkomstig uit Schotland.
