Africa produces over 6 million MT of cashew apples annually, but most are disposed of at harvest. Brazil, the origin of the cashew tree, produces 300-330,000MT of raw cashew nuts (2.7 million MT cashew apples) per year. Only 12% of Brazilian cashew apples are processed, including juice extraction, with the rest used for fresh and dried fruit, jams, wines, candies, and animal feed. Harvesting occurs between September and January, with fruits picked from the ground or collected in nets, and stored on plastic trays to avoid sun exposure. Cashew apples can be kept for up to 21 days with proper packaging and cooling. Juice extraction involves washing, cutting, squeezing, heating, homogenization, and pasteurization. The market for cashew apple products is primarily domestic, with some exports, and waste products are used for animal feed, natural colorants, and other products.
