Summary

Cassava roots cover nearly 50% of Gabon's population's energy needs, with 57% used for human consumption. The cassava stick is a commonly consumed food, but its nutritional role is not well known. The study aims to determine the best conservation processes to obtain healthy products. A questionnaire survey was conducted to determine consumption habits, motivations, and representations of the urban population of Libreville. Cassava sticks were bought on markets and categorized by type of packaging and ethnicity. The study evaluated the transformation process of tubers into cassava sticks and observed the sticks' conservation according to packaging type.
