Summary

Morpholine, a common solvent and emulsifier in wax coatings for fruits and vegetables, may not pose a health risk by itself, but it can undergo nitrosation during digestion to form N-nitrosomorpholine, a genotoxic carcinogen, if there are excess nitrites in the diet. The safe dose of morpholine in humans is 4.3ng/body weight/day, and sufficient N-nitrosomorpholine can be produced in the human gut after ingestion of morpholine-treated fruits/vegetables to pose a health risk, highlighting the need for its effective removal and consumer education.
