- Protein Content and Amino Acid Composition: Amaranth grains have higher total lysine content than common cereals but comparable to legumes, with higher methionine and cysteine levels compared to cereal and legume proteins. Essential amino acids (excluding tryptophan) constitute 43%–49%, exceeding the WHO reference pattern (31%).

- Impact of Processing: Popping reduces total lysine and cysteine by 36% and 37%, respectively, while fermentation decreases these by 16%–20%. Fermentation increases most free amino acids (except arginine) significantly.

- Protein Digestibility: Popping decreases in vitro protein digestibility (IVPD) by 8.3%–17.1%, while fermentation increases it by 4.8%–7.5%.

- Potential for Complementary Foods: Substituting amaranth for wheat or maize in complementary food formulations could meet daily indispensable amino acid requirements for young children, given its high protein content and digestibility after appropriate processing.
