Summary

To brew AHS Pacific Saison, start by sanitizing all equipment. In a 20-quart stockpot, heat 2 gallons of water to 155°F, then add 1 lb Flaked Wheat in a grain bag and soak for 25 minutes. After soaking, discard the grains, add 1 gallon of water, and bring to a boil. Add 7 lb Wheat Extract, stirring to dissolve, and bring to a boil again. Add hops at specific times: 3 HBU Pack for bittering at 60 minutes, ½ oz Cluster and ½ oz Saaz for flavor at 15 minutes, and ½ oz Cluster and ½ oz Saaz for aroma at 5 minutes. After the boil, cool the wort to 80°F and transfer it to a sanitized primary fermenter. Add cool water to make 5 ¼ gallons and stir well. Check the specific gravity and pitch the yeast, such as White Labs Belgian Saison 3724 or Wyeast Belgian Style Saison Ale Blend 568, once it has warmed up to 72-78°F. Allow the beer to ferment for 5-7 days, then transfer it to a secondary fermenter and let it clarify for another 5-7 days. Check the final specific gravity and bottle the beer, adding priming sugar to carbonate it. Store the bottles in a dark place at room temperature for at least 3 weeks before chilling and serving.
