Summary

This study investigated the proximate composition and glycemic indices of four different cassava food products: abacha, tapioca, garri, and fufu. The glycemic indices for these products were found to be 84, 78, 92, and 84 respectively, indicating that they are all high glycemic index foods. The results showed no significant differences in the glycemic indices of the four cassava diets, and the method of preparation did not affect the glycemic indices. The study concluded that cassava food products are of high glycemic index, which may contribute to health problems associated with high blood glucose levels.
