Summary

Researchers from the National University of Food Technologies developed a mathematical apparatus for an expert system to model ice cream recipes with specified quality parameters. The system uses mathematical models and methods to calculate multicomponent ice cream recipes with standard chemical composition, taking into account raw materials and functional and technological ingredients.
