Summary

Polysaccharides from agro-industrial biomass residues have gained attention due to their potential for sustainable applications. The main sources of these residues are maize, rice, and wheat, which can contain up to 18%, 44%, and 35% of cellulose, respectively. The US, China, and the EU are the main producers of cellulose and hemicellulose-rich residues. Pectin and inulin are commonly obtained from fruit and vegetable residues, while chitin and hyaluronic acid are found in animal waste. The utilization of these residues can help reduce food loss and waste, and contribute to the UN's Sustainable Development Goals, particularly SDG 12, Responsible Consumption and Production.
