Summary

This study examines consumer behavior towards buying organic foods, premium prices paid for them, and reasons for paying more. It finds that premium prices vary by item, time, and grocery outlet, with most customers believing organic foods are healthier, chemical-free, environmentally friendly, and of better quality. The organic food market has grown significantly, with sales increasing by 17.1% in the US from 2007 to 2008, and conventional retail outlets now dominating the market. Consumers' willingness to pay premium prices is driven by factors such as taste, freshness, quality, safety, and health conditions, as well as personal and demographic characteristics like education, income level, and urban living.
